Grandma's Apple Cake ~ Torta di Mele della Nonna

This is Jason's Grandma's apple cake recipe - now, to set the record straight she was not Italian, but she did pass on this fantastic, no-fail, super moist apple cake recipe!

Grandma's Apple Cake

Torta di Mele della Nonna

3 cups flour

1 cup oil

1/2 teaspoon salt

2 1/2 teaspoon vanilla

5-6 apples, thinly sliced

1 1/4 cups sugar

4 eggs

1/3 cup orange juice

3 teaspoon baking powder

2 teaspoons cinnamon

In a large bowl, mix together all the ingredients except apples, beat until smooth.

In another bowl, mix sliced apples with cinnamon and 2 tablespoons of sugar.

In  greased 10 inch tube pan, make layers of batter 1/3 at a time, then a layer of apples.  Ending with apples on top.

Bake at 350 degrees for 1 hour 15 minutes until a pick comes out clean.

In loving memory of Grandma & Grandpa~

This is how I will always remember Grandma, in/near the kitchen, hands on her hips,  yelling at us, "Oh who needs it?!"

I never had a Grandma :(

If she had been alive when I was born, perhaps she'd have made me apple pie like this.

Ashley & Jason,
How wonderful to see this familiar recipe & this photo of Ruth! (I got to your link via Leslie's Facebook.) I grew up with the Goldsteins -- we were like family. I will try to find a photo of Ruth with her mile-high spongecake to post. And there are many food/kitchen stories -- once, Ruth & my mom rolled out pasta dough to make cherry verenishkes -- it took up the whole table. My mom has the recipe somewhere ...
Ciao & regards,
Amy Gottlieb
