A Culinary Holiday - Pizza Class Al Fresco!

Classic Pizza Dough Recipe
1 3/4 lb. strong white bread flour (Italian type 00)
1 1/2 Cups fine ground semolina flour
1 level tablespoon fine sea salt
1/4 oz. envelope active dry yeast
1 tablespoon sugar
just over 2 cups lukewarm water

You don't need an outdoor wood burning oven to make this- it will totally taste better, but why not give it a try at home - just spend about 20 bucks for a pizza stone for your oven or try it on the BBQ!

Pile the flours & salt onto a clean surface & make a 7-inch well in the center.

Add your yeast & sugar to the lukewarm water, mix up with a fork & let sit for a few minutes - then pour into the well.

Using a fork & circular movement, slowly bring in the flour from the inner edge of the well & mix into the water.  It will look like a thick mush - continue to mix, bringing in all the flour.

When the dough comes together & becomes too hard to mix with your fork, flour your hands & begin to pat it into a ball.
Knead the dough by rolling it backward & forward, using your left hand to stretch the dough towards you & your right hand to push the dough away from you at the same time.

Repeat this for 10 minutes, until you have a smooth springy, soft dough.

Flour the top of your dough, put it in a greased bowl, cover with a towel & let stand  couple hours until it doubles in volume.

Roll it out on a floured flat surface.

Let the toppings begin!

Now the tricky part of getting into the oven.

Watch carefully turning it a bit - then pull out after about 2 minutes!
